Equipment

  • Blender
  • Popsicle mold
  • Popsicle sticks
  • Measuring cups
  • Measuring spoons

Ingredients

  • 3 cups watermelon chunks
  • 6 fresh mint leaves
  • Juice of 1 lime
  • 2 tbsp coconut water

Instructions

Add the watermelon chunks, mint leaves, lime juice, and coconut water to a blender.

Blend until completely smooth, about 30 seconds.

Taste the mixture before freezing. If the watermelon is very ripe, additional sweetener may not be necessary.

Pour the mixture into the popsicle molds.

Insert the popsicle sticks and freeze for at least 4 hours, or until completely solid.

            Notes

Because watermelon contains a lot of water, this version naturally has a lighter and icier texture than popsicles made with yogurt or coconut cream.
