Equipment

  • Saucepan
  • Small Frying Pan

Ingredients

½ cup rolled oats

1 cup water or low-sodium vegetable broth

1 cup fresh spinach

1 large egg

Pinch of salt and black pepper, to taste

Drizzle of olive oil

Instructions

1. Combine the oats and water or broth in a saucepan and simmer over medium-low heat for 5 to 7 minutes, stirring occasionally.

    2. Stir in the spinach during the last minute of cooking, just until wilted.

      3. While the oats finish cooking, fry the egg in a separate pan with a little olive oil to your preferred doneness.

        4. Season the oats with salt and pepper, top with the fried egg, and finish with a crack of black pepper.

          Notes

Vegetable broth adds noticeably more flavor than water here, since there's no honey or maple syrup in this recipe to carry the taste.
