Piña Colada

This one tastes like a frozen vacation. Pineapple and coconut milk blend into something naturally sweet, so it needs barely any added sweetener at all.

Equipment

  • Food Processor
  • Can opener
  • Rubber Spatula

Ingredients

3 cups frozen pineapple chunks

1 medium ripe banana, sliced and frozen

1/3 cup full-fat coconut milk

1 tablespoon honey

1 teaspoon lime juice

Instructions

1. Pulse the frozen pineapple and banana together in a food processor until roughly chopped.

    2. Add the coconut milk, honey, and lime juice.

      3. Blend until smooth and creamy, scraping down the sides as needed. Pineapple has more water content than other fruit, so this batch blends a little faster than the rest.

        4. Freeze for about 1 hour before scooping.

          Notes

For a toasted coconut topping, sprinkle unsweetened coconut flakes over each scoop right before serving.
