Chocolate Peanut Butter

Frozen banana gives this one a genuinely fudgy texture, and there's no cream in sight just banana, cacao, and peanut butter doing the heavy lifting. It's the closest thing on this list to a healthier peanut butter cup, minus the wrapper.

Equipment

  • Food Processor
  • Rubber Spatula

Ingredients

4 medium ripe bananas, sliced and frozen

3 tablespoons unsweetened cacao powder

1/3 cup natural peanut butter

2 tablespoons maple syrup

2–3 tablespoons milk of choice, as needed

Pinch of salt

Instructions

1. Add the frozen banana slices to a food processor and blend until crumbly, scraping down the sides as needed.

    2. Add the cacao powder, peanut butter, maple syrup, and salt.

      3. Blend until smooth and glossy, adding milk one tablespoon at a time only if the mixture is too thick to move.

        4. Scrape into a container and freeze for at least 1 hour for a firmer, more scoopable texture.

          5. For extra crunch, fold in a small handful of chopped peanuts right before freezing.

            Notes

Natural peanut butter (the kind that separates in the jar) blends more smoothly than the shelf-stable kind. If your peanut butter is very stiff, stir it well before measuring.
