Avocado Lime

Avocado sounds unexpected in ice cream, but it blends into something genuinely creamy, closer to a frozen key lime pie than anything else on this list. Banana rounds out the flavor and keeps the texture scoopable.

Equipment

  • Food Processor
  • Citrus juicer
  • Rubber Spatula

Ingredients

2 ripe avocados, pitted

1 medium ripe banana, sliced and frozen

3 tablespoons lime juice (about 2 limes)

3 tablespoons honey

Pinch of salt

Instructions

1. Add the avocado, frozen banana, lime juice, honey, and salt to a food processor.

    2. Blend until completely smooth, scraping down the sides a few times — avocado tends to stick to the blades, so a little patience helps.

      3. Taste and adjust: more lime for brightness, more honey for sweetness.

        4. Transfer to a container, press plastic wrap directly onto the surface to limit browning, and freeze for 1 to 2 hours.

          Notes

This one is best enjoyed within 2 to 3 days, since avocado can lose its bright color the longer it sits in the freezer.
